Description
The Casaliva is an olive of great vigor and constant productivity. The tree has a pendulous shape (called gentile in Italian), with a globular crown made of long and slender branches; the leaves are elliptical and of a dark green color, giving it a “weeping willow” look. Grown in the northern regions of Italy, particularly in Trentino and Veneto, it is prized for the exceptional quality oil it produces. It ripens late and in phases, with a medium oil yield. The production and history behind our Casaliva Reserve extra virgin has led to its D.O.P. designation, which means Denominazione d’Origine Protetta—Protected Designation of Origin—a high honor in the country with the world’s highest standards for olive oil, in an area renowned for its olive oil for centuries.
FLAVOR PROFILE:
After being hand-harvested from the tree, the pits of the Casaliva olive are removed, so that only the flesh is sent to the mill to be pressed. The result is an amazing Reserve extra virgin olive oil full of flavor and texture. Light and aromatic, Casaliva oil has concentrated flavors of green tomatoes, asparagus and lettuce; notes of spice and black pepper are integrated and refined.
PAIRING SUGGESTIONS:
With its light and aromatic flavor profile and gorgeous texture, our Casaliva Reserve extra virgin olive oil is a must-have in the pantry of any olive oil lover! It is beautiful to use with fish, as its delicate nature complements that of fish. Its complex flavor profile, however, means that it will stand up equally as well to meats, especially lamb chops. Pair it with our Champagne or Lavender Balsamic vinegars for elegant, vibrant dressing over fresh field greens, tomatoes and mozzarella cheese.
