ITRANA HIGH QUALITY EXTRA VIRGIN OLIVE OIL Regional Italian cultivar of olive, our organic Itrana extra virgin olive oil comes from Itrana native to Italian region of Lazio, Central part of Italy! These precious, fleshy olives were hand-harvested and pressed within a few short hours of being picked. It is a DOP cultivar. The D.O.P. and has Protected Designation of Origin -- a high honor in the country with the world's highest standards for olive oil, in an area renowned for its olive oil for thousands of years. This variety of Itrana or Itrane olives, is self-incompatible and olive flowering is early. It is also used in pollination of other varieties of olive such as Leccino, Pendolino and olivastro. It is a dual purpose and it is highly prized for its fleshy and tasty table olive as well. FLAVOR PROFILE: The Itrana olive is unusual in that it ripens later than usual, in March and April instead of November, with the resulting oil bring creamy, buttery with high level of fruity aroma. It has a beautiful overtones of green tomato, artichoke and fresh-cut grass, however, it could be delightfully bitter and pungent as well. The beautiful green/golden color of the oil rounds out this treat for the senses.
