HIGH QUALITY MINESTRONE,
This beautiful and delicious medley of heirloom, NON GMO legumes from Riso Carena has a wonderful flavor and texture, Black-eyed peas, semi-pearled farro, red lentils, borlotti and cannellini beans cook up into a hearty minestrone. Suggested use: Soak one half the mix in one quart of cold water overnight, preferably in a clay pot. Place over the fire, bring to a boil, and simmer for about 30-45 minutes. In a separate pan, Sautee some pancetta in olive oil together with a chopped onion, one stalk of celery, and a carrot. Add 1/2 cup of tomato sauce. Cook in the pan for about 2 hours on a medium temperature. Add all the ingredients of the pan to the clay pot with the minestrone cooking, cook for another 15 minutes while adjusting the water. Add salt, pepper, and very good raw extra virgin olive oil. Serve hot with a sprinkle of parmigiana cheese.
